FOOD | Bibimbap Style Quinoa and Kale Bowls

For the past few days I have been whipping up these quinoa and kale lunch bowls and they are so delicious I have to share the recipe. If you follow my Instagram feed you might have seen me post a pic of it yesterday.  I'm calling it Bibimbap style after the Korean mixed rice dish, but it is really just a mix up of some healthy veggies and quinoa, topped with a fried egg.

Bibimbap Style Quinoa and Kale Bowl

1/2 cup - 1 cup of cooked quinoa (depending on how hungry you are...)
1 cup chopped kale
1/2 cup finely sliced yellow onion
1/2 shredded carrots (i just use my peeler to make the "shreds")
1 tsp olive oil
1 tsp roasted sesame oil
2 tsp soy sauce
1 tsp rice vinegar
1/2 tsp thai fish sauce
1/2 tsp honey
1 tsp chili oil (I'm in love with the stuff from Brooklyn Wok Shop)
1/2 avocado diced (optional)

Cook quinoa to package instructions.  You only need 1/2 cup or so for this recipe but it is nice to have leftovers.  Layer cooked quinoa in your bowl.

In a sauté pan over medium heat, warm 1 tsp of olive oil.  Add in kale and about 1/2 tsp of soy sauce. Sauté for 2 mins.  Then add this to the quinoa.

In the same pan, add the onions and carrots, a drizzle of soy sauce and roasted sesame oil, and sauté for 3-4 mins until the onion is softened.  Add this mixture to your bowl.

Give the pan a spritz of PAM and fry up one egg over easy.  Lay this on top of the bowl.

(You can add some avocado if you want too.  Avocado never hurt anything.)

In a small bowl, combine the remaining tsp of soy sauce, the rice vinegar, fish sauce, and honey.  Drizzle this sauce over the bowl.  

Finally, it you like things spicy, top your fried egg while a healthy dollop of chili oil.  My fav is this stuff from the Brooklyn Wok Shop...


There you have it!  Delicious and nutritious.  And it is easy to customize depending on what you have on hand...spinach or watercress instead of kale, maybe add some baby corn or water chestnuts for crunch, or try some marinated tufo instead of the egg.

Now go make yourself one...it would even be great for dinner!

Getting back into it with the Blue and White Bash

I've been meaning to get back to blogging for some time now, but the past few months have been crazy...first the with moving to New York and then with the baby!  Tomorrow the little one is 3 months old (I can't believe it!) and since she has settled down a bit, now seems like the perfect time to start back into blogging.

I saw that the Pink Pagoda was having a Blue and White Bash and figured I'd join in the fun with a little Blue and White Bar design that would glam up any home!


First off is the blue and white splatter wallpaper by Hinson.  I think it would make a fabulous backdrop to a funky / eclectic bar area.  The mirror is from Crate and Barrel and the chandelier and rug are both from West Elm.  The vintage bar (insert shameless plug) you can find on my Etsy shop!  We just finished making it over in a deep blue, so the timing couldn't have been more perfect. 

To stock your new fabulous bar, we have some beautiful glasses from C. Wonder, Ikea, and Crate & Barrel.  Crate & Barrel also has a ton of blue and white wares in the special collection designed by Paola Navone, like these serving platters, great for staging the bar and serving appetizers. A glass pitcher from Pier 1 and some ikat napkins from West Elm complete the look.  Of course, you can't forget about the liquor.  With so many beautiful bottle designs, you can curate a bar that is boozy and design friendly!  

And of course my post wouldn't be complete without my favorite little blue treasure...

ETSY | Emily McDowell

When I jumped on Etsy this morning this print caught my eye...


How adorable is that!  I'm ordering it now for the nursery.  The print is by Emily McDowell a California-based artist.  Her shop (check it out here) is full of great prints with fun and inspirational quotes and beautiful colors.







She also sells stationary, scarfs and iphone case...

TRAVEL | Back from Miami


 
 
Well I'm back from my Miami Beach babymoon and NOT happy about it. It certainly does feel more Spring-like here in Connecticut, but I'll take 85 and sunny on South Beach any day over New England weather. 
 
I just finished uploading my pictures of the trip to Instagram (follow me here to see them!) but I've pulled a few to share.
 

I dragged my husband into some of the swankier hotels to have a look-see.
We stopped for a drink  (virgin pina colada, please) at the Kelly Wearstler-designed Tides Hotel...

 
And at the Shore Club where they use a killer lapis blue in the pool area.
 
 
The SLS Hotel had the most stunning seashell chandelier in their dining room. 
I loved it paired with the black and white library wallpaper.

The astroturf treatment on the stairs was awesome...and low maintenance!
 
 
We did end up checking out Vizcaya which was truly beautiful.
 
 
I took some illegal photos of the interior but just for paint colors, I swear!  
The main halls were painted the perfect shade of barely-there shell pink...
 

 
And the plasterwork in one of the staircases was done in mint green and light taupe. 
The palette is so fresh and modern for a house that is nearly a century old.

TRAVEL | Miami Babymoon

Tomorrow we are off to Miami-South Beach for our babymoon!  I can't wait to relax in the sun and soak in all the beauty the area has to offer.

We went a few years ago with friends and didn't do much sightseeing.  This time I want make sure I check out Kelly Wearstler-designed Tides Hotel and Viceroy Hotel.




The tortoise shell installation is killer.
